The wonderful fresh crispness of Bok Choy makes this quick and easy "Bok Choy Salad"--highlighted with sliced almonds, sesame seeds, and ramen--the perfect accompaniment for Spring and Summer fare. And, as a bonus, it travels super well for potluck or a trip to the beach!
Start by browning the sliced almonds, sesame seeds, and ramen in canola oil. Separately heat the dressing ingredients including apple cider vinegar, a touch of sugar, and soy sauce, then let cool.
Toss all before serving. (We like to combine ahead of time to let the flavors blend.) We love "Bok Choy Salad" with rotisserie chicken (store bought or page 89 "Savoring") and/or fresh shrimp. So fresh and so Yum!
